Ingredient: Dark Soy Sauce(老抽)

Dark soy sauce(老抽 – lao chou – lall choh – lao= “old”, chou= “to draw out”)is very important to Chinese cooking because it adds black color to Chinese dishes. You can use either Pearl River Bridge or Koon Chun. Pearl River Bridge also makes “mushroom dark soy sauce”, which has straw mushroom extract in it. I use the regular one, but you can also use the mushroom one.
