Joseon soy sauce (조선간장 – Joseon ganjang – choh suhn gahn jawng – Joseon is the Korean kingdom lasting from 1392 to 1897) is the traditional soy sauce of Korea. It has a different flavor than than the other kind of soy sauce, introduced by the Japanese, because Joseon soy sauce has no wheat. It also has a lighter color. Koreans in the countryside make it at home, but you can find it at a Korean grocery store. This is actually an optional ingredient because you can substitute fish sauce for it.
